recipes for people tryna Little Chef it up

I enjoy productivity that’s tangible, so cooking is one of my favorite things to do. You get to put ingredients together…and then feed yourself…and feel satisfied that you’re being #healthy and #adult-y. What more could you ask for???

Here’s what I’ve been eating in the past few weeks!

Panko-Crusted Fish and Roasted Potatoes

This recipe is super doable and will make you feel fancy as hell. I substituted yogurt for mustard since I didn’t have any and…it worked, surprisingly.

The potatoes were so simple to make and convinced me that roasted vegetables are the most time-efficient way to consume Helth.

 

Shrimp Scampi

I thought this would be really hard but it took maybe 20 minutes. It’s so lemony! and garlicky! and delicious!! I’d make the sauce just to dip bread in, honestly.

This has got to be one of the tastiest dishes you can make for the amount of effort you put in. All it takes is tomatoes, bell peppers, onions, some spices like paprika and cumin, and eggs. I added a jalapeño and a metric fuck ton of chili powder because, uh, why not?

Shakshuka is great because it functions as both a ~uwu fancy brunch with the homies~ food and a ~god i’ve been eating shit for the past week i need a healthy dinner~ food. 10/10

 

Sweet and Sour Tofu Stir Fry

Can we appreciate how aesthetic this looks? The colors are so nice to look at…

I’ve cooked with tofu a lot with the past, but it’s never been as crispy as it was here. Turns out that an alternative to pressing the water out of tofu with a heavy object is just sticking it in the freezer and letting it thaw; that releases a lot of excess water.

Am I the only person who didn’t know soft boiled eggs were a thing until I ate ramen for the first time? I thought chalky green yolks were inevitable but lmao, no. Ever since I made my first properly soft boiled egg I’ve been addicted. They’re so good. God, yes.

(using whiskey ice cubes for iced coffee is so obnoxious but so Good)

 

 

Gnocchi With Tomato Paste

Super easy and indulgent! I’ve made my own gnocchi before, but I was lazy and used store-bought stuff this time. I had to open a can of tomato paste with a knife–did NOT go well, highly recommend not doing that.

 

 

 

 

 

 

Avocado Salad

You can throw this together in under five minutes! It’s a perfect summer snack or side dish. It’s also a way to consume avocado that isn’t guac or avocado toast, which are my go-to’s.

Avocado is one of the best foods ever tbh

 

Risotto

God. This was SINFUL. It takes a bit of time since you have to stir in chicken broth pretty slowly, but it’s so worth it. Is there a better date night food??

 

 

 

 

 

 

 

 

 

Fried Rice

Slapped! Oyster sauce is where it’s at. I had a ton of frozen vegetables and some leftover shrimp I needed to use, so this worked out perfectly.

 

 

 

 

 

 

 

 

Goat Cheese Smoked Salmon Open-Faced Sandwich

Lol this has a long name for something so simple, but yeah. It’s exactly what you think it is. Goat cheese + yogurt = amazing sauce that you can use as a dip, or on sandwiches/bagels like this. HIGHLY recommend.

 

 

 

 

 

Tomato Basil Salad

I had a huge number of cherry tomatoes that I had to use somehow, so I bought some basil and finessed the shit out of them. I’m lowkey obsessed with basil…it’s really freaking good, guys. I know I haven’t declared Course 18 yet but basil + mozzarella + olive oil with anything = perfection
